Since 2011, producers Rodrigo Sanchez Valencia and Claudia Samboni have dedicated themselves to cultivating a number of highly sought after varieties across the farm’s 12 hectares.\u003c\/p\u003e\n\u003cp\u003eThis Sidra offering was crafted with patience and precision, beginning with floating the ripe cherries to remove defects, depulping them, and then washing the seeds. These washed seeds are placed in GrainPro bags and undergo carefully controlled low-temperature fermentation for 80 hours at 10–13°C.
