Rodrigo Sanchez brings us the crown jewel Laurina varietal from his La Loma farm. This rare varietal is prized for its distinctly unique: naturally low in caffeine, incredibly delicate, wonderfully sweet, and exceptionally difficult to cultivate. Its tiny, slender beans require immense care from farm to roast, yielding only the smallest harvests each year.

At La Loma, only select Laurina cherries—measuring 24–28° Brix with a pH of 5.6–5.9—are carefully hand-harvested. After a 24-hour fermentation in harvest bags, the cherries are floated to remove impurities and stabilize temperature. Drying begins under direct sun for 5–6 days, followed by slow drying under shade canopies for 20–24 days to preserve clarity and complexity.
