The coffee comes from Finca La Loma, nestled in the Agua Negra district of Huila’s Pitalito municipality. Since 2011, producers Rodrigo Sanchez Valencia and Claudia Samboni have dedicated themselves to cultivating a number of highly sought after varieties across the farm’s 12 hectares.
This Sidra offering was crafted with patience and precision, beginning with floating the ripe cherries to remove defects, depulping them, and then washing the seeds. These washed seeds are placed in GrainPro bags and undergo carefully controlled low-temperature fermentation for 80 hours at 10–13°C. After, any remaining mucilage is removed and the seeds are washed again before undergoing a 25 day drying on African beds.
By slowing the fermentation process and the microbial activity, Rodrigo and his team were able to preserve and amplify the Sidra’s naturally vibrant character, deep complex layers of fruit and floral notes while maintaining remarkable sweetness and clarity in the cup.
